This Assess, Improve and Maintain process is the ultimate in control for restaurant owners.  We know that real permanent improvements will not happen if the most important problems are not identified and fixed.  But stopping there leaves the door open to backsliding and reverting to bad, old habits.  The crucial third step in our process eliminates this problem.  We continue to visit the operation on a periodic basis to maintain the previously-implemented changes and take any remedial actions necessary to make sure they are permanent.
